Analyzes of Binding Forms of Calcium in Wheat Grains

At the XRF beamline of the Elettra synchrotron (Trieste, Italy), the colleagues from our department, Prof Dr Katarina Vogel-Mikuš and Dr Paula Pongrac, with a young researcher Teja Pelko from the Biotechnical Faculty of UL, performed analyzes of calcium binding forms in wheat grains containing different concentrations of calcium. First, the calcium distribution mapping was performed, then the XANES analysis was carried out in selected grain tissues. This type of research is important because the binding forms affect the level of calcium bioavailability from wheat flour and wheat products.
